First attempt at quiche...

Just come across this post and indeed the quiche looks good.

Please could you let us know where you got the recipe from or provide a link as I will have a go at making one as my wife loves quiche.

Thanks. Hmm, no proper recipe - but let me try to recall!

Pastry (Half fat to flour):

6oz Plain flour

3oz Butter (or Lard)

pinch of salt.

Blend together until 'crumbly' and easy to combine (use a drop of water if necessary).

Filling:

3 or 4 eggs whisked with Full fat milk added (Think of it like a big omelette mix - to achieve about 400ml) - Seasoned too.

Grate about 400g of Mature Cheddar (Can adjust - but will make sense in a sec)

Various extras: Sliced onion and sweetcorn (Or ham and sliced leek?) Mushroom? Anything you like really, as long as it'll cook in about 30mins.

Method:

Heat oven to 180°c

Grease your flan dish (mine was about 10" in diameter?)

Flour the worktop and roll out the pastry in a circle, so it will cover the flan dish and sides.

Once lined, press in the pastry for a nice snug fit.

Then just layer your fillings and season in-between (onion/cheese/season/sweetcorn/cheese/onion/sweetcorn/cheese/season/onion to finsih). Keep going until your cheese just 'domes' above the dish

then pour your egg (omelette) mix into the dish, making sure it gets evenly distributed.

Place in the oven for about 25-30 mins? You can see if its looking done, as it'll start to brown nicely. But give it a little shake, to make sure its cooked through. If it's too wobbly, place in for a couple more mins.

 

Sorry, this is about the best I can do, as it was a recipe my mother told me a long time ago, and I just 'did it'.

ps. I didn't bother blind baking the pastry, but do so if you require a really crisp base (will be nicer if you have time). But my base wasn't soggy, so it's up to you. :)

Just did another one to make sure what I told you is correct. Go for four eggs, and it’s closer to 30 mins in the oven at 180. 👍🏻

Looks good, will be attempting this weekend. Should it turn out OK, I will post a photo.
