I am addicted to a latte from a cafe in my city. I am using their beans (buying beans directly from them) to make lattes at home with my Gaggia Classic + Compaq K3 setup and although it tastes wonderful, it is still so different than what they produce. Significantly different and no matter what I do, I cannot replicate their tasty coffee! The cafe uses a VA388 Black Eagle and a Nuova Simonelli Mythos One. My goal is to create a coffee/latte which tastes exactly the same (or gets as close as possible) and I was hoping if you could point me to the right direction. What equipment do I need to create the same taste? I drink two coffee per day and not more than that. Want to keep it simple, just interested in this amazing taste. Hope you can help! Oh I forgot to mention: I use the same recipe they do: 1:2 which in terms of weight is 18g of coffee, 36g of water and in 30 seconds. It changes sometimes (down to a few seconds) but even when I get That ratio perfect, does not seem to be exactly the same. Only thing is they brew in 93 degrees Celsius but I Don’t have a pid installed, not sure what temp I brew my shots. Could it be this? The taste is not always the same although I repeat the same process, too. Do you think I should upgrade from the Gaggia to a device which is more forgiving? Have it for a few years now.
