  1. I hope this post will serve as an introduction and outline my journey with coffee so far, but will also get a bit more specifically into beans in the end. Warning: it's quite a long read I have liked coffee for many years but until relatively recently it was usually the cafetière brewed variety. Usually strong and black. But with lots of travel, I found myself enjoying espresso and Americano coffee more. I had received a DeLonghi EC330 espresso machine as a gift but didn’t really get on with it for long. The ESE pods were expensive and I don’t think I was getting the best out of it with the ground coffee I was using at the time so it got shelved. Years later my fiancé and I were holidaying in Cornwall and the little cottage we were staying in had left scones and clotted cream next to the pod type espresso machine that was on the counter. We enjoyed the coffee so much I hatched a plan to get my old machine out and then source some ESE pods online at a better price and quality point the expensive ones that had come with it originally. We found a small UK coffee roaster that supplied their own ESE pods and ordered a selection pack of about half a dozen different types for us to sample to find the ones we liked best. After much tasting, we settled on one called Columbian supremo as the hands-down favorite and that was it. For a year or so we stuck to exactly that in our little DeLonghi machine and found that with a bit of care to finesse the process, and the usual maintenance we had perfectly good coffee every time. We had thought to upgrade to a bean to cup machine when our DeLonghi finally succumbed to an inevitable demise and I had worked out that we were getting through over £400 a year in pods so changing to beans from pods would pay for the machine relatively quickly. The coffee we were using in pods was also available in whole beans by the kilo so that would work out well. But the little DeLonghi it just kept on going. So, I bought a burr grinder (just a Krups GVX2 as I was still relatively ignorant of the gourmet coffee upper echelons) and a couple of kilos of the Columbian supremo beans and set about experimenting. After a few runs with grinds and dosing I was gratified to find that the coffee was also a big step forward in terms of flavour, with a lovely rich crema. However, after only a few weeks of enjoying our new improved coffee, the little DeLonghi developed a fault and lost pressure, leaving us stranded. No morning coffee was such a shock to the system that my fiancé, who has 5am starts 5 days a week, suggested we have a backup machine. I felt a project coming on… So began my latest foray into the world of coffee, researching what machine would suit. By now we were quite attached to the superior results of freshly ground espresso and quite attached to the craft or ceremony of it all, so the idea of bean to cup was not so appealing. I am also not a fan of plastic in contact with hot food or beverages so that idea was gone. Instead, I settled on getting a Gaggia Classic, and after discovering the latest ones are not ideal, I decided to buy a 2014 model, with a plan to refurbish it and fit PID and a few other upgrades along the way (OPV mod, upgraded boiler heater, insulated boiler etc, which may be the subject of a later post) So that brings me back to beans. Good crema and smooth taste, Ideal for regular coffees, cappuccinos and lattes This coffee consists of Coffee from Central America and roasted to perfection by skilled coffee roasters Cupping Notes Fruit notes, chocolate, medium body, clean finish, balanced, bright acidity, caramel notes, nice after taste, smooth We typically drink it black and something like a Lungo in strength (an 8g dose and a 90ml shot) We are interested in trying something else, similar, hopefully, better, so although I am sure this is a very personal thing, I would be interested to hear suggestions for those more familiar with what’s out there. Has anyone here tried the Columbian supremo and can compare it to other beans? Rave coffee is just down the road so probably worth a visit - and I notice that they do a similar sounding Columbian medium roasted bean. Other suggestions also welcome!

    Rave coffee

    Hi everyone, quick maybey silly question.... just received an order I placed with Rave coffee, notice it was roasted yesterday and it says to let rest for 10days. I've also ready that beans should be used within 15 days of roasting. So does this mean they should ideally all be used between day 10-15? I won't drink that much so would it better to start using earlier or keep using later...?!? Thanks in advance for any guidance!
  3. Having a bit of a clear out last night and came across a 1kg bag of Rave's Signature blend at the back of the cupboard..... Roast date 15/06/15, best before 15/12/15 Thought I'd give it a whirl and see what is was like..... Unbelievably good in fact, Incredibly chocolatey with a great depth and very smooth, A nice dark crema, darker than usual? I don't know if that's a good or bad thing? it did pour slightly slower than usual, I can only assume because the beans were dryer due to age? I tried 15g in, 25g out and also 15g in 30g out both very nice in a flat white, I usually have milk based drinks I did notice there wasn't as much coffee oils as usual All in all a positive experience, I wont be so concerned about using it up in a month, after it's rest period in future
  4. I've just had a delivery of some Rave Wahroonga Beans, Do I open the packet and let them breath a bit, If so, minuites, Hours, Days? or can I go straight in and try them?? This is my first packet of proper beans... Simon
  5. I visited RAVE on Wednesday and what a friendly hangout and roster it is. Sofas, papers, tables and a first class view of all that goes on behind their wall of glass. The house coffee was GREAT and so was the welcome. Bought some coffee and will start on it on Sunday. Well worth popping in.
  6. Hi folks, Recently opened a bag of Rave's colombian suarez and having trouble getting a decent brew out of the aeropress. I've followed Rave's method and Foundry's but don't think either suit the Suarez that well? I've read it's meant to be a great bean if done correctly. Could anyone point me in the right direction of a method they've had luck with? I don't have a temperature controlled kettle (I just wait while I'm grinding before pouring), and am using the porlex grinder (5 clicks from 0 currently, can change if people suggest altering). Last night (inverted) I used: 15g coffee, 30ml water stir for 15s, further 170ml water, lid on, wait 1.5mins, press and dilute 1/2 and 1/2 with water. Was ok, but seemed to be lacking - again, I'm not exactly sure what it was lacking but it didnt quite hit the spot! Thanks in advance, Joe.

Hi We bought a machine and a grinder and are coming to the end of out first order of beans - 2KG of COMPASS MYSTERY NO 8 We are really enjoying this coffee, but as we are new to this I would now like to try something different. I was thinking to use RAVE to take advantage of the 20% new customer offer, and we are wondering what we might like. Their ITALIAN JOB looks very tempting from description and price, but I might prefer to go for something single origin first to see what it is all about. Any recommendations come to mind? Thanks...   13. Hi, moving this conversation from the lengthy Rave thread.. So I've got a 18/04 roasted bag of the beans that I think are already good to use - no foaming, just a little bubbly on crema. I started off with 14g doses and aimed for what Rave recommended as 1:2.14 ratio, trying to get 30g out under 27sec. I probably have done about 8 shots or so and for the last 4 the grind was always set to the same level. Those last 4 are quite odd as the first pull is quite long (or short) and the other is the opposite. I am single (in this case for 2 coffees) dosing with a tamper on top (but if single 14g dose is in, the beans are not under any weight). Down to the detail than (last 2 shots): 14.04g in and 31g out in 25.8s - drinkable, nothing special though 14.06g in and 29.25 out in 16.95s - same as above and can't really taste much of a difference. The crema looks nice but than it disperses pretty quickly (in comparison to my previous beans - and I always pull to doubles and keep them on the warmer tray and than move onto doing milk). I can only think about my routine to be making this kind of difference as I usually brush the chute as the beans are going through the grinder to get less clumping and speed up the dosing (F5 has a tendency to fill up the chute and you need to brush it to get all of what went in out). Any tips? Thanks! Edit: I've just done another two 14.03 in, 31g out in 23.4s 14.00 in, 30.4g out in 21.5s The only difference is that I didnt brush the exit chute while grinder was on.. still no change in flavor, but quite a decent cup.
  14. Finally got the kitchen sorted in the new place and we managed to find a small square for the DB. I want to get some LED lights installed to bathe it in glory but apart from that, and a new MBK Heft 585 en-route it is about there. Got my Rave LSOL to get dialling into and a big bag of Charlestown from Casa Espresso waiting to go!

  17. I've already emailed Sage about this to see what they say but figure it can't hurt to get a second opinion. My Oracle doesn't seem to be grinding fine enough for what I expected. During my white glove service I was using Rave Italian Job but Steve (CC Barista) didn't seem to be able to get it fine enough either and it was over extracting by quite a bit. He changed over to the CC Barista Guatemalan coffee and with the grinder set at 8 and a 30 second extraction, this made the perfect shot. This coffee was a bit dark for us and when I went on the website it says it's for filter coffees and cafetieres, not espresso. That and the delivery was expensive so it wouldn't be a viable option to use this. I've been trying to replicate these results using more Rave coffee, roast dates vary from about 4 days old up to a max of about 9 days and it all seems to be much the same. I've got the grinder set on 1 and have even removed the burrs and manually turned them to fine a notch (Out the box they were set at 6, now they are at 5) and it still seems to be over extracting. I'm getting about 70 - 80mls for a 30 second shot with the grinder at its finest setting. I'm assuming Rave coffee should be a good coffee to use as I know it's quite popular on here. I asked Steve about the low grind numbers and he says it varies from machine to machine. My thinking is that I would like it somewhere in the middle (About 20) and that would give me the option to go up or down depending on what beans I'm using and accounting for changes over time as the beans age. My puck is usually dry after extraction, sometimes there is a small area of surface water but not a lot (Steve adjusted the dosing as he said it was a bit wet). I've tried adjusting the tamp settings but this results in the puck breaking up rather than coming out whole and didn't make much difference to the coffee. All settings are stock on the machine apart from the grind settings. My workflow is as follows, Turn machine on, fill cup with hot water to pre-heat, run a sink shot through the porta-filter to heat everything, purge milk frother, start steaming milk, remove portafilter and dry, grind, put porttafilter in grouphead and extract. Does anyone have any advice?
  18. Well I've been messing with my Sage grinder pro and DTP with supermarket beans and finally switched to fresh beans... Got a few bags from Rave.... I recorded my timings and would like opinions as most people are grinding on much lower settings yet I'm achieving good results (I think) on a high grind setting... The coffee tastes lovely by the way. 18grams of fresh beans ground down using grind setting 14. I'm getting out of my DTP 36gram in 28 secs giving me a good head of crema. Dropping the grind setting to 8 and 10 it's taking a while longer to extract,approx 10 secs extra. Started another bag of beans tonight,thought I'd start at grind setting 12, again it took longer than 28secs... So maybe these beans have to be at setting for 14 from Rave? Reading on here a lot of people tend to grind below setting 8,so it's made me wonder why I'm not. I'm using a Motta tamper and am getting a nice level 'puck' (not sure the terminology of this sorry).... Any ideas out there or should I just 'get on with enjoying coffee'! Thanks in advance Paul

Hi Ive recently moved to Italy for the summer and have only brought my V60 and aeropress and need some beans and dont want to have them posted to a UK address then someone post them here for me so i was wondering if anyone knew any roasters in Italy or anyone with international postage charges that arent outrageous. Used rave but they only to UK postage. Thanks in advance.
  21. My workplace provides us with expensive bean-to-cup machines which never really hit the spot. They also have a Bravilor (spelling?) drip machine, for which they buy ground coffee. I keep a Lido E in the office, and a Clever dripper, and take in my own beans. However, I may have persuaded them to switch from the horrible beans they buy to Rave Signature. I'm wondering if I could get good results with my Lido, their Bravilor, and their Rave Signature. Or is this blend not really suited to brewed?

    Rave Daterra

    Has anyone tried the Brazilian Daterra beans from Rave (the expensive ones!). I'm thinking of buying them as a gift but I don't want to be spending extra money for the sake of it if they're not even particularly special.
