  5. Wearing different coloured pants will affect the grind my friend!! I'm not totally sure why dense beans are such a pain to grind but my theory is that with a greater level of energy required, the harder the bean, the more prone to shattering unpredictably they become when they hit the burrs, while a less dense bean is nibbled in a more controlled manner, sort of like cracking nuts in a nut cracker, the tougher ones always explode! It seems to be less of an issue the finer you are going though. As well as being generally of a higher density, mixed heirlooms are a mish-mash of beans of all shape
  6. Aluminium foil should be fine but I'm a bit funny about aluminium as I know it is linked to health problems. Probably nothing to worry about though.
  7. Hi Earle! I think you have seen them, it's just that 'dual stage immersion' technique I use for 750ml brews with a very course grind. I honed it over a year and find it incredibly consistent and really maximises the fruit, acidity and clarity I'm almost obsessively seeking in my coffee. I don't use a lid, only because with such a steady temp from the Ubercosied Buono, the technique calls for almost as course a grind as possible with Burrtha to avoid overextraction.   9. Cheers for the welcome back, It's great to be back. Yeah, I do feel like I've reset the batteries but I am gagging for coffee! Even just to make coffee for other people would be great, I miss geeking out as much as anything. I'm thinking an espresso based experiment of some sort is in order, I've been quite experimental with brewed over the last 12months or so but not focusing on the brewers cup now it's time to start thinking outside the box with espresso! Have you given my Chemex technique/recipe a go yet Gary?
  10. What grinder are you using? Jirmiwachu is a very dense little mixed heirloom(as are the majority of Ethiopians) and if your grinder isn't A1 your grind consistency will be will be far more erratic than say a Bourbon from El Salvador, that coupled with the Jirmi's complexity and you are going to find a massive diversity in flavour profile brew by brew, what is your brew recipe and are you controlling all the variables you can?

  13. Yeah, I order with them alot and never had any issues before but I usually use PayPal and I'll be doing the same from now on. I don't want one bad experience with one member of staff to sour my opinion of the rest of the team. They are after all one of my favorite roasters.

Hi guy's, This is something I didn't want to ever have to write as I love Square Mile but I am really rather annoyed at the manner in which an issue was dealt with(or not dealt with) the other day. Last weekend I decided to celebrate the end of my months coffee abstinence by putting in an order for 2 bags of Jirmiwachu Espresso and a bag of Red Brick(Sweetshop was off the site at the time), not knowing when they would be roasting again I waited until the Thursday when I received an email saying they couldn't accept the payment.     I went for a case of the 6oz/180's too for exactly the same reason, I even only intended on buying a pair myself but when I reaslised 6 wasn't all that much more money I took a case + 1 espresso cup to trial whether I'll be needing a set of those too!! I don't normally bother with saucers either but for some reason I just like to have them! A purchase of cups just doesn't seem complete without them! Awesome, Cheers! I too need a new steam valve for Silvia, it's not that bad but it is bugging me! Mostly when you shut the valve after steaming and the leaking wand blows

    YOU GUYS ARE SOOOOOOO BAD FOR MY BANK BALANCE!!!!!!! thanks I'll try and keep them quiet and act surprised when someone notices my cups are different! I'm not spending anyone elses money or spending what I don't have but I do end up having to defend my heinous spending on a daily basis!!
  21. It gets old trying to explain to people why your coffee doesn't work with milk, so in the face of a large crowd and no espresso machine, I would just suck it up and go with instant.
  22. Steve is talking about home espresso for the mainstream, it should be left for the geeks and I agree, there are few coffee experiences more disgusting than a badly made espresso! As for the grinder thing he said £250 minimum but ideally £400, again I agree. To be fair he doesn't sell crap on his site, the grinders he has up are: The Rocky, Preciso and Vario. It's just you bud! hahaha;)

I was in a perpetual state of what you just described for some time, I have cut back my intake though as it was starting to bum me out and I'm actually considering a caffeine break for a month as it can't be good for the old neurons running on 11 all the time. A little paradoxical really because coffee has sometimes been the very reason I've lost the focus to write on here! The most annoying caffeine side affect that I suffer with is inability to trust my own spelling, so I find myself constantly checking google on my spellings! I'm happy enough with it to produce a full length track using it actually, It'll take me anything up to a couple of weeks depending on how long it takes me to finish the sodding fascias and soffits on my house but I'll send you the file when it's done if you want? To be honest, the twin walled shot glasses look awesome but I much much prefer drinking from ceramic!
